Course abstract
The course work is a part of the study subject "Technology of food preparation ". The students using theoretical knowledge for catering enterprise make technological documentation, prime costs estimation for dishes. Students propose the aim, looking for solution possibilities and realising them.
Learning outcomes and their assessment
Knowledge and perception about nutrition changes during product preparing; cookery technology individuality;
skills – the trainees can integrate the acquired knowledge, use professional terminology; work out technology documentation. The students can interpret the results and formulate conclusions of the appropriate results; competences – the students are able to organize their work, take the initiative and assume responsibility to outcome of decision, to act in accordance with legal provisions.
