Course abstract

Master students obtain knowledges about chemical composition and properties of milk and meat. They learn about assurance of milk and meat products quality. They are acquainted with the legislation and requirements for insurance of product quality, with technological processes and their role for production of milk and meat products.

Learning outcomes and their assessment

After the course student will have:
• theoretical knowledge in basis of animal breeding food quality, processing conditions and influencing factors;
• skills to determine factors influencing quality of raw materials, evaluate quality of food product;
• competence: evaluate quality and suitability of raw materials for processing, choose appropriate processing for products production.
